Love in a Jar ❤

​My friend had been trying to get me to make phirni since the day I started this blog. I had been waiting for the perfect opportunity and the right time has arrived.☺ My big boy’s bday..😊 Happy birthday my dear hubby 😙.This was a small gift for him. The dish has blown him away..😋This is a very easy dish to make but a bit time consuming. However if you are patient enough to give a small surprise to that special someone, this is the dish for you. It is sure to bring a beautiful smile on their face.

Ingredients:
Phirni:

  • Basmati Rice: 1 cup
  • Milk: 500ml
  • Cardamom powder: 1 tspn
  • Sugar: 1 cup
  • Sweetened Condensed milk: 1 tbspn
  • Rose essence: 1-2 drops

Gulab Jamun:

  • Bread: 7 slices
  • Milk: 1/3 cup
  • Water if required
  • Oil

Sugar Syrup:

  • Sugar: 1 cup
  • Water: 2 cup
  • Cardamom powder: 1 pinch
  • Rose essence: 1-2 drops

Base:

  • Biscuit: 7-8
  • Unsalted butter: 1/3 cup, at room temperature

Garnish:

  • Rose flower: 4

Method:

Base:

  1. In a blender, powder the biscuits.
  2. Add the melted butter and once again blend it.
  3. In the serving bowl, place 2-3 spoon of the mix and press them until firm. 
  4. Keep them in the refrigerator to set.

Phirni:

  1. Soak the rice in water for 20-30 minutes.
  2. Drain the water from the rice.
  3. In a blender, grind the rice until it is finely powdered.
  4. Boil the milk in a non-stick pan.
  5. Add the powdered rice into it and stir well in a low flame.
  6. Let the rice cook in the milk in medium flame. Do not cover it with a lid.
  7. Once the rice is cooked, add sugar and stir well. Also add sweetened condensed milk.Check for the sweetness.
  8. Add cardamom powder and rose essence and stir well.
  9. Keep phirni aside and let it cool.

Sugar Syrup:

  1. In a sauce pan, pour water and sugar. 
  2. On a medium flame, let it boil.
  3. Simmer the flame until the syrup thickens.
  4. At this stage, add cardamom powder and rose essence.
  5. Keep the syrup aside.Let it cool.

Gulab Jamun:

  1. In a bowl, place the bread and pour the milk into it.
  2. Let the bread absorb the milk.
  3. Knead it with fingers. Do not knead too much as it will harden while frying.
  4. Add water if required.
  5. Now, grease the hands with ghee or oil. 
  6. Make tiny balls out of it and place them on a plate
  7. Heat the oil in a kadai. 
  8. On a medium flame, drop the bread balls into it.
  9. Fry until golden brown.
  10. Pat the excess oil on the bread balls.
  11. Add these balls into the sugar syrup.
  12. Let them rest until the Jamun softens.

Garnish:

  1. Pluck the petals from the rose.
  2. In a bowl or water, dip the petals and pat them dry with a kitchen tissue paper.
  3. In a sauce pan, toast the petals.
  4. Keep them aside.

Plating:

  1. Take the serving bowl in which the biscuit mix has been kept to set from the refrigerator.
  2. Place 2-3 spoon of phirni into the bowl. 
  3. Place a few gulab jamun as the nxt layer.
  4. Once again, add a spoon or two of phirni.
  5. To garnish, place 2-3 gulab jamun.
  6. Also place a few dried and toasted petals on them.
  7. Serve them.

Tips:

  • Since two desserts are combined here, the quantity of the sugar has been reduced in phirni.
  • To make phirni alone, one can add more sugar to it if needed.It can be  garnished with almonds and cashews as well.
